The link you included has been VERY helpful--I think I'll be able to find the right sugar now.  There is so much information out there; I'm glad you have pointed me in the right direction.

I just got your book a couple of days ago and have spent some time going over it.  I'm starting out small by switching my family from regular sugar to this new cane sugar and by making small changes to the ingredients I have onhand in my pantry.  I have flagged at least 15 recipes in your book and want to have everything I need before I dive in!

Just so you know, this is the best cookbook I have come across for myself.  My doctor said I may have a wheat intolerance so I'm trying to avoid wheat.  However, most cookbooks are either gluten-free or low-fat.  I need neither of these (low-fat recipes include too many artificial ingredients).  Your book is bringing me back to the basics; similar to my mother's home-cooking only healthier (if that's possible!).  I work in a bookstore and have had my manager order in several copies which I will be putting my Staff Pick sticker on.  In the sea of cookbooks out there, this is one I will be highly recommending.  In between our "Vegan" and "Diets & Weight Loss" sections, there should be a "Healthy Eating" section.  This is where I'd put your book.

I bought Dr. Laura's Wholesome Junk Food cookbook about a month ago, and so far (partially due to a cross-country road trip) have made (only) four things--but all four have been fantastic!

I started with the coconut haystacks, which were easy and delicious. Then I made the strawberry ice cream with some tasty organic berries that weren't quite as pretty as some of the others--and which normally my kids would have refused to eat. There were some great savings right there!

Today I made a two-fer--the vanilla ice cream, which actually came out a bit more banana-y than I intended, but which my husband LOVES, and the chocolate sauce, which both my husband and Mom-in-law declared was far superior to the high-priced "Ahhh-laska" chocolate sauce I have been buying in the past.

My mother-in-law is so impressed, she wants a copy of your book too. We'll be getting her one when she heads back home to California. Less for her to pack that way. :)

Anyway, I just wanted to say, THANK YOU. Are there any plans for a follow-up book in the works? We hope?

Hello creaters of the yummiest snack food ever!

I had the good fortune to stumble across Laura’s “Better Brownie” Bite-lettes ® on a recent trip to NYC, when I was at Whole Foods. Luckily, I was shopping on an empty stomach, and these were crying out to me from the shelf.

Alas, not long after arriving back home in Rochester, NY, my limited supply ran out, and just tonight, I spent 20 minutes on the phone with the poor Whole Foods team members in the Bakery and Grocery departments, bugging them to track down the cookies (because I couldn’t remember the brand name and was kicking myself for not saving the package). Anyway, I’ve found you – and I noticed on your website that you’ve got a Rochester-based consultant named Lisa. My question to Lisa (or whomever your sales evangelist is these days) is whether anyone has approached Wegman’s about carrying this brand in their “Nature’s Marketplace” department? I figured I’d ask, before I march in there myself and demand they start carrying them. Then again, does anyone get away with demanding anything from the Wegmans?

My last resort will be ordering them directly from you guys – but I shudder to think how much I’d expand the “junk in the trunk” if faced with multiple tubs of your yummy bite-lettes ® – willpower, schmillpower. And now that I’ve seen all the other varieties available on your website, how will I sleep at night, knowing that I have yet to try the oatmeal chocolate chip, banana split and cole’s choc chip bite-lettes ®?? I want to thank you. You have really made a difference in my life and I appreciate it. We have a kosher home. Finding kosher junk food has never been difficult. There are a lot of cookies, candies, and snacks available in the local grocery stores.

About 6 weeks ago I was placed on a gluten free diet. Oh boy. Not only kosher, but also gluten free. Yes, I have found a number of cookies and other snack foods. But I always feel so guilty eating them.

And then, one day, I was in My Organic Market in Rockville MD and I saw Laura’s healthy junk food, gluten free, kosher, delicious, AND healthy. Oh what joy! I can finally enjoy eating, and without guilt.

Frankly, I don’t know if I’m on the gluten free diet for life or whether I will someday be able to eat donuts and regular bagels again. Regardless of my diet requirements, I will continue to eat Laura’s healthy (delicious, guilt-free) junk food.

At the recommendation of a friend I decided to try a gluten-free lifestyle only three short weeks ago. Even in that short time my palette has changed and I crave healthier foods although I knew it was only a matter of time before the lifelong chocoholic in me would require a brownie fix. Previous GF cookies have satisfied my sweet tooth so I wasn’t worried about finding snacks… but then came along your treats. I found them during my recent visit to Whole Foods… or rather they found me… glaring, tempting, screaming my name until I picked up a carton of Better Brownie. OH MY! What sinful little bites those are! Now the only worry I have is overindulgence. As my boyfriend jokingly reminds me… “Just because it’s GF doesn’t mean it won’t go to your a..!”. Ha! You have created a masterpiece.

I was very pleased with the product during the “Burn.” A little more information about the event helps put my experience in context… I raced as a member of a two-person team. You race on mountain bikes from noon Saturday until noon Sunday through the night. We finished 6th in our class … not bad for a couple of patent attorneys.

In any event, generally, the strategy I follow for these types of endurance … is to keep up the fluids, electrolytes, carbs, and fats. The latter is where I think you’re product helped me most, although the nice dose of K+/Na+ and carbs in your product helped too. The non-refined, and all-natural composition of your product was easy on the stomach which is usually a big issue (at least for a 34 year old like me) and really had a pleasing taste (Lemon-Vanilla and Chocolate were my favs and I stuck with them). It appears that indeed one problem long distance racers seem to encounter is being able to (literally) chew, swallow, and keep down food, especially when it gets hot. I found a couple of your bitelettes between laps helped keep things in check. The taste and especially the consistency suited me very well. Very soft, very little effort to chew, only a bit of liquid required to wash down. There are only so many … your body can take after riding for a sustained period in 90+ degree heat. I found your biteletts to be a nice alternative to [other bars] which is the source that I previously turned to for more substantive food to sit in your stomach.

The bottom line is that the product served as a very palatable complement to a mix of other things that I guzzled during the event, and I think it helped keep my gut in check and provided some slow burning fuel in conjunction with some other pure carb compositions that I took on board. I think at the next race (two weeks…24 hours of big bear), I may load up a little bit more pre-race (maybe 2 or 3 a couple of hours prior) to see how that works.

I had to drop a quick email to let you know about this WONDERFUL snack. We have a technician ar work who is VERY health conscious. He “teases” us in the office for drinking sodas, eating chocolate and our overall bad choices of unhealthy snacks. Hello Laura and Laura’s gang. I am writing from … in regards to “Bite-lettes ®.” When I found the first container of bite-lettes ® in the snack bag (the little soft cooler my wife carries around for our two daughters), I thought, “Hmmm, what are these?” I sampled one, then two, then three. When my wife, caught me with my hand in the bite-lette ® jar, she scolded me, claimed them as hers, and that was that. Well, a quick trip to the market remedied that situation, and now I have a container of my own.

When she read the ingredients, I said, in my very mature way, “You forgot about the extra Yum.” She smiled a little, and rolled her eyes – I still think it’s funnier than that.

Anyway, the Bite-lettes ® are delicious – the Anna-Banana Split being the household favorite.

About 2 years ago, I found out that I have Celiac Disease which restricts me from eating food containing gluten. while at one of my first Gluten Fee food shopping trips at Whole Foods, I spied a little “post-it” sized sign that read “Gluten free cookies”, with a tiny arrow at the bottom. I followed it. At the other end of the aisle I see the same sign (arrowless) above a shelf of 2 flavors of your cookies. Boy was I happy! First thing, like always, I read the ingredients, I couldn’t believe that there were so few items! and all of them being “real” food. I thought, “man this is too good!” so I slyly grabbed one of each flavor, took three of four steps and turned around to grab one more of each. after eating all the flavors, I decided that I love all of them. I am a competitive cyclist and I never leave for a ride without at least a few before a ride. “I just bought some of your cookies from the display table at Whole Foods. I try to buy only healthy, natural, organic foods for my family and for the most part no one complains. The only time I hear any resistance from the troops is when I bring home the sweets. My kids says “they taste funny” or" look funny" or just refuse to even try them due to the post traumatic stress of previous experience.

But today was different. When I went to the check out I noticed several Whole Foods employees coming back again and again to the display and sampling the cookies. We’re talking about teenagers (and most of them boys) who were in love with cookie bits. I decided I’d give them a try. And thank god I did because they were Delicious!!!!!! So much so, I told the kids they wouldn’t like them because they were more of those healthy cookies. Somehow they caught on that this might be different than past experiences (my kids are smart! and I’m not good at hiding my my sounds of delight and satisfaction when I’m eating them).

Needless to say… they tried them and liked them. Next time I go I’ll buy two tubs and hide two in the car.

Dear Laura,

I just had to write and tell you how amazing your Xtreme Chocolate Fudgebite-lettes ® are! I was at Whole Foods today and craving something rich and chocolatey, yet when I looked at the other cookies on display, often the very first ingredient was sugar! I typically follow a very healthy diet and the only sugar I eat is fruit and honey (in very tiny amounts). Even though I wanted something rich and sweet, I did not want something that was all sugar. I wavered on a decision between a few things (really only because of the size, more on that below), and ultimately decided on the bite-lettes ® because honestly, they were the only thing that looked rich enough to satisfy my crazy chocolate craving. No matter how healthy something is, if it doesn't hit the sweet tooth, then it's all for naught!

The only reason I almost didn't buy them was the size. When I do buy "naughty" food I try to make sure I only get a single serve package to keep myself from eating several servings at once. If I may suggest, perhaps you could also make some smaller packages? Two or three of them really hit the spot (and they are surprisingly filling!), and I've seen a similar company do this with two per package. I think you'd probably sell more that way.

Either way, thank you thank you for making these delicious treats! They are so rich and fulfilling and orgasmically chocolatey!! My birthday is next week and I've been dreading the decision of whether to have birthday cake or not - I'm thinking they might be a great substitute to have at my party!
