How did our Grandma’s Gingerbread bite-lette ® come about? Dr. Laura tells the story of how this healthy gingerbread cookie was created:

“My grandma used to make a ginger snap cookie that was spicy and had sugar crystals on the top. She also made a ginger cake that was dark like a chocolate cake, but was made with molasses. She would serve this cake year round, and I have many fond memories of eating my grandma’s delicious ginger creations. At home, molasses and maple syrup were seen as alternative sweeteners. Instead of chocolate milk, my dad would often fix us a glass of molasses and milk. Molasses is what is removed from the whole and complete brown sugar cane when they are making white sugar. After processing sugar cane they end up with white sugar that has no vitamins and nutrients and dark, rich molasses that contains iron and many trace minerals and nutrients.

I wanted to make an old fashioned yet healthy gingerbread cookie and I chose to use molasses as an alternative sweetener because of the nutritive value. Grandma’s Gingerbread is a combination of my grandma’s two desserts—moist with plenty of molasses, and ginger as a warming spice. I wanted my customers to have the same type of warm, family experience snacking on my healthy gingerbread cookie that I had eating my grandma’s treats.”
