Ingredients

How did our Cashew Chocolate Chip come about? Dr. Laura tells the story of how this healthy cashew butter cookie was created:

“People kept asking me when I was going to make a peanut butter cookie, but I didn’t want to because of all the peanut allergies. However, I love peanut butter cookies!. As a kid, peanut butter cookies were my favorite school dessert. I thought about what I could create that would generate the good feeling of a peanut butter cookie. Someone in the company said, “Why not use cashews?” I did some checking with people that had peanut allergies and many of them said they could eat cashew butter. So, I thought, a healthy cashew butter cookie would be a nice alternative and have a great nutty taste.

I decided to make this healthy cashew butter cookie without coconut because of people with coconut sensitivities. Another change was the size—I made these smaller, so people would have the experience of eating more for the same amount of calories. Nice, mini chocolate chip cookies that would fit in your hand.

When it came to the label, one of our employees, was very patriotic and wanted to use the colors of the American flag. We had the label company check the colors of the American flag and use the exact same shades of red, white and blue on our label.”
