Our gluten free Charlotte’s Chocolate Chip bite-lettes ® were created to fill a need for great tasting cookies that didn’t contain gluten. Dr. Laura tells the story of the little girl behind this healthy chocolate chip cookie:

“All of our original flavors were selling really well when I started to get emails from people who wanted to eat our treats, but couldn’t because they were on gluten free diets. Current gluten free products I tried were not very good; the flavors were bland, the texture was off, and a lot of them were dry and grainy.

Also, at the same time I was still working a “regular” job part-time while I was growing the company. I was tutoring a sweet, eight year old girl named Charlotte. Her family had recently been through a lot of upheaval, including divorce. Charlotte was attending a new school where she was learning to fit in when her doctor diagnosed her with celiac disease. At the school, the teachers would periodically cook a pancake breakfast for students with excellent grades, and Charlotte had earned this reward. Soon after, Charlotte confided in me that she did not want to go.

“Why not?” I asked. “It’s wonderful that you earned this great reward.”

“Because I can’t even eat the pancakes,” she said sadly. “What’s the point? I don’t fit in.”

She was so sad and defeated. My heart went out to this little girl who had gone through so much in such a short period of time. I wanted her to feel special again, and to have a delicious treat that she could enjoy. I decided to put in the time, energy, and effort to make gluten free healthy chocolate chip cookies that everyone would enjoy eating, not just those individuals on a gluten free diet. I chose to make my original healthy chocolate chip cookie into a gluten free version first because it was already a top seller, and I knew that a certain little girl really missed having chocolate chip cookies.

I named my gluten free Charlotte’s Chocolate Chip after her. To this day, Charlotte proudly tells people that the cookie is named after her.”
